Fatty Acids

Fatty acids (eg. docosahexaenoic acid) are produced in the body from fats by the enzyme cholesterase and consist of a molecule made of long chains of carbon and hydrogen and ending with oxygen. They are usually found combined with other substances in the body and only a tiny amount is freely circulating. Essential fatty acids cannot be made in the body and must be included in the diet.
