The term polyunsaturated refers to compounds that contain several double or triple bonds between atoms that can be opened to accept more atoms into the molecule. Polyunsaturated fats (fatty acids) is one that has two or more double bonds between carbon atoms in its carbon ring that can be opened to accept hydrogen atoms.
